What I learned from My Recent Speech at the Amish Homesteading Event
The Alarming Food Trends in America
I recently spoke at a large Amish homesteading event. I discussed the effect of food and habits on metabolic balance. I was encouraged by the number of people like me whom I call “truth seekers.” There were even medical professional in the audience. Unlike many social media or public speakers or writers, my goal is not to attract more attention or income by being controversial or conspiratorial. My goal is to constantly read and keep updated about recent unbiased scientific discoveries, and share/explain them with people, in simplified terms, so they can make wise decisions about their food and lifestyle choices. I offered my books not for sale but by a thank-offering/donation (pay what you can afford!) inspired by:
“No one can serve two masters.. You cannot serve both God and your riches.” - Matthew 6:24
Today, I also removed my original landmark article about kidney stones: “Kidney Stones: Root Causes and Simple Remedies” from behind paywalls because I believe education and health should not be for profit, otherwise it often becomes biased/tainted by sponsors and personal gains.
What I found by talking to many people at the event was the alarming prevalence of an imbalanced diet, heavy on processed/denatured food, meat and animal products and light on the following:
Fermented food such as kefir (using raw pasture-raised grass-fed milk), sauerkraut (using chemical-free cabbage) and fresh home-made sour dough bread (using freshly-ground whole-grain chemical-free wheat berries).
Fresh seasonal chemical-free produce from own garden or local small family farms, particularly potatoes (baked/boiled), garlic, beets, carrots, tomatoes, lemon, pepper, legumes such as lentils and beans, and herbs such as basil, thyme, etc.
Natural food in their natural states, with the fiber (pulp), not finely ground (as in some bleached fine white flour without bran), colored, juiced, separated (as in milk from milk fat), overheated (as in many canned or processed foods)

Why does this matter? Fermented and metabolically-balanced foods plus chemical-free herbs, greens and rainbow-colored vegetables like beetroot, peppers, carrot, garlic and lemon, dense in vitamins and phytonutrients can regulate our immune system (healing or fighting cancers, etc.) and detoxification processes in the body.

I had planned to listen to your talk at Family Days but I was caught up at the burns and wounds tent with the Lancaster Community Caregivers. We are an "English" family practicing regenerative farming in East Berlin (www.oconnorfamilyfarm.com). As a mom and natural practitioner (Master Herbalist) I would concur that the standard diet (and sick care system) perpetuates disease and ill health. There is a gross lack of knowledge in the general populace on the dangers of processed food. Working part time on an ambulance as an EMT, I see it all the time - absolutely no correlation (or is it no desire for correlation?) with lifestyle, diet, and health. One must actively seek healing and truth. Thank you for pursuing the truth and sharing your information.
